Serves two
Ingredients:
-Half a wedge of lettuce
-One can of unsalted tuna
-One medium/large avocado
-One medium/large tomato
-Organic Mayonnaise
-Champagne vinaigrette dressing
-Crackers or tortilla chips
-Salt and pepper
Prep the tuna:
1) Open the unsalted can of tuna. Pour out the excess liquids and rinse with water. Strain.
2) Place strained tuna in a separate bowl. Add one tablespoon of mayonnaise.
3) Use a fork to shred the tuna and blend with mayonnaise.
Putting together the salad:
1) Wash the lettuce, then cut into smaller pieces. Place equal amounts of lettuce into two separate bowls.
2) Dice tomato into desired sized pieces, then add to both bowls of lettuce.
3) Slice avocado in half, and add one half to each bowl.
4) Pour half of the tuna mix into one bowl, and the other half into the other.
5) Sprinkle with salt and pepper, then add desired amount of dressing.
6) Add some crackers, crispy onions, or tortilla chips for some extra crunch!

Heath tip: Substitute avocado for mayonnaise in the tuna mix!
