Good morning everyone! Today I started off my day with some waffles topped with So Delicious dairy free Coco Whip, maple syrup, and some fresh raspberries!  This simple concoction is quick to make and super flavorful!

This quinoa and avocado bowl is my go- to for a super quick, easy and healthy lunch or snack! Simply combine one cup of cooked quinoa and half an avocado in a bowl. Sprinkle with salt and pepper, and enjoy! 

A Delightful Vegan Brunch

Today I went with my friend to the popular breakfast restaurant Breakfast Republic in San Diego and ordered the Soy Chorizo Vegan Plate. It was SO good! I was pleasantly surprised by the amount of flavor the dish held, along with the well-working textures within it. The dish consists of soy chorizo with corn, beans, rice, mung bean egg substitute, parsley, salsa and guacamole. I would highly recommend this dish to anyone who eats there, and I look forward to indulging in it again!
