Lemon Garlic Cod

This dish is filled with bold and fresh flavors!


Ingredients:

-Thawed cod fish (2 pieces)

-Fresh or frozen green beans (18-22 ounces)

-Fresh garlic (finely chopped)

-Fresh or bottled lemon juice

-Chef Paul Prudhomme's Magic Salmon Seasoning

-Trader Joe's 21 Salute Seasoning

-Oregano

-Salt and pepper


Serves two


Instructions


For the Cod:

1) Thaw cod (if frozen). Heat approximately one tablespoon of coconut oil on medium heat. Place the fish in the oil. BE CAREFUL, the oil may spatter!

2) In a separate bowl, mix 1/4 cup lemon juice, 1 tsp of garlic, and 1 tsp of oregano. Give it a quick stir, then pour the mix over the fish. Sprinkle salmon seasoning on top. Repeat on both sides of fish for maximum flavors. Cook fish approximately 4-6 minutes on each side, or until thoroughly cooked through.

3) Remove fish from heat once cooked, and enjoy!


Green Bean and Onion Stir Fry:

1) Heat up a pan on medium heat with one tablespoon of olive oil or cooking spray.

2) Once the pan is hot, add 18-22 ounces of green beans and half a finely chopped onion. (Ratio of green beans to onion can be based off of your preference!) If green beans are frozen, cook for a few minutes prior to adding the onion.

3) Add in a few dashes of lemon juice (about 1/4 cup) for acidity, one tablespoon of 21 Salute Seasoning, or any other versatile seasoning, one tablespoon of garlic, and some red chili pepper flakes (amount depending on your spice tolerance). And of course, add some salt and pepper!

3) Cook until green beans are cooked through and onion is starting to caramelize.


Mashed Potatoes:

Fresh mashed potatoes are the best, but Costco potatoes are also delicious! These are the kind I typically use in my dishes.





(P.S. Measurements can be adjusted based off of taste preferences, and don't need to be perfect!)
